BBQ Ranch Chicken & Rice Bake Recipe

Ingredients

• 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
• 1 cup uncooked long-grain white rice
• 2 cups chicken broth
• 1 cup BBQ sauce (your favorite brand)
• 1 packet (1 ounce) ranch seasoning mix
• 1 cup shredded cheddar cheese
• 1 cup frozen corn (optional)
• 1/2 cup diced red bell pepper (optional)
• 1/4 cup sliced green onions (for garnish)


Instructions

Step 1: Preheat the Oven
1. Preheat Oven: Preheat your oven to 375°F (190°C).

Step 2: Prepare the Casserole
1. Mix Ingredients: In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, BBQ sauce, ranch seasoning mix, corn, and diced bell pepper (if using). Stir until everything is well combined.
2. Transfer to Baking Dish: Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.

Step 3: Bake
1. Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
2. Uncover and Add Cheese: After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese on top.
3. Continue Baking: Bake uncovered for an additional 15 minutes, or until the rice is tender and the cheese is melted and bubbly.

Step 4: Serve
1. Garnish: Remove from the oven and let it sit for a few minutes. Garnish with sliced green onions before serving.
2. Enjoy: Serve hot as a delicious and filling meal!
