BBQ Pork Skewers with Filipino BBQ Marinade Recipe

Ingredients

For the Marinade:
• 1/2 cup soy sauce
• 1/4 cup brown sugar
• 1/4 cup pineapple juice
• 3 tablespoons ketchup
• 2 tablespoons minced garlic
• 1 tablespoon minced ginger
• 1 tablespoon vegetable oil
• 1 teaspoon ground black pepper
• 1 teaspoon salt
• 1 tablespoon sesame oil (optional)
• 1-2 red chili peppers, minced (optional, for heat)

For the Skewers:
• 2 pounds pork shoulder or pork belly, cut into 1-inch cubes
• Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes to prevent burning)
• Chopped green onions and sesame seeds for garnish (optional)


Instructions

Step 1: Prepare the Marinade
1. Mix Marinade Ingredients: In a medium bowl, whisk together the soy sauce, brown sugar, pineapple juice, ketchup, minced garlic, minced ginger, vegetable oil, black pepper, salt, and sesame oil (if using) until well combined.

Step 2: Marinate the Pork
1. Prepare Pork: Place the cubed pork in a large resealable plastic bag or a bowl.
2. Add Marinade: Pour the marinade over the pork, ensuring all pieces are well coated. Seal the bag or cover the bowl.
3. Marinate: Refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Step 3: Assemble the Skewers
1. Preheat Grill: Preheat your grill to medium-high heat.
2. Skewer Pork: Thread the marinated pork cubes onto the skewers, leaving a little space between each piece for even cooking.

Step 4: Grill the Skewers
1. Grill: Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally until the pork is cooked through and has nice grill marks. The internal temperature should reach 145°F (63°C).
2. Baste with Marinade: If desired, baste the skewers with leftover marinade during grilling for extra flavor. Ensure you only use marinade that has not come into contact with raw pork.

Step 5: Serve
1. Garnish: Remove the skewers from the grill and let them rest for a few minutes. Garnish with chopped green onions and sesame seeds if desired.
2. Enjoy: Serve the BBQ pork skewers with rice, grilled vegetables, or a fresh salad.
