Ingredients
For the BBQ Chicken
• 2 cups cooked chicken breast, shredded
• 1/2 cup BBQ sauce
• 1 tablespoon olive oil (optional)
For the Coleslaw
• 2 cups green cabbage, finely shredded
• 1 cup red cabbage, finely shredded
• 1 cup carrots, grated
• 1/2 cup mayonnaise
• 1 tablespoon apple cider vinegar
• 1 tablespoon honey or sugar
• Salt and pepper to taste
For the Wraps
• Tortillas or large lettuce leaves
• Optional: sliced green onions, pickles, extra BBQ sauce
Instructions
Step 1: Prepare the BBQ Chicken
• Mix Chicken and Sauce: In a bowl, combine the shredded chicken with BBQ sauce and olive oil (if using). Mix well until the chicken is evenly coated.
• Heat (Optional): If desired, heat the chicken mixture in a skillet over medium heat until warmed through.
Step 2: Make the Coleslaw
• Combine Vegetables: In a large bowl, mix the shredded green and red cabbage with grated carrots.
• Prepare Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey (or sugar), salt, and pepper until smooth.
• Toss Coleslaw: Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated. Adjust seasoning to taste.
Step 3: Assemble the Wraps
• Lay Out Tortillas or Lettuce: Place a tortilla or lettuce leaf on a flat surface.
• Add BBQ Chicken: Spoon a portion of the BBQ chicken onto the center of the wrap.
• Top with Coleslaw: Add a generous scoop of coleslaw on top of the chicken.
• Add Optional Toppings: If desired, sprinkle sliced green onions, pickles, or drizzle extra BBQ sauce.
Step 4: Wrap and Serve
• Wrap It Up: Fold the sides of the tortilla or lettuce leaf over the filling and roll tightly from the bottom up.
• Serve: Cut in half if desired and serve immediately.
