Baked Zucchini Cheese Bites Recipe

  • 2 medium zucchinis (about 2 cups grated)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour (or breadcrumbs)
  • 1 large egg
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Cooking spray (for greasing)

 


Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).

Step 2: Prepare the Zucchini

  1. Grate the zucchinis using a box grater or food processor.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture.

Step 3: Mix the Ingredients

  1. In a large bowl, combine the grated zucchini, shredded mozzarella cheese, grated Parmesan cheese, almond flour, egg, minced garlic, dried oregano, salt, black pepper, and red pepper flakes (if using). Mix until well combined.

Step 4: Form the Bites

  1. Using your hands, form small balls or patties from the mixture and place them on a baking sheet lined with parchment paper. Flatten them slightly for even cooking.

Step 5: Bake

  1. Lightly spray the tops of the zucchini bites with cooking spray for a golden finish.
  2. Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy.

Step 6: Serve

  1. Remove from the oven and let cool for a few minutes.
  2. Serve warm with marinara sauce or your favorite dipping sauce. Enjoy!
