- 4 Tasmanian salmon fillets (about 6 oz each)
- 1 lb (450g) asparagus (trimmed)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme (or fresh thyme)
- Salt and pepper (to taste)
- Lemon wedges (for serving, optional)
Instructions
Step 1: Preheat the Oven
- Preheat Oven: Preheat your oven to 400°F (200°C).
Step 2: Prepare the Ingredients
- Prepare Asparagus: Place the trimmed asparagus on a baking sheet. Drizzle with 1 tablespoon of olive oil, and season with salt, pepper, and half of the minced garlic. Toss to coat evenly.
- Prepare Salmon: In a small bowl, mix the remaining olive oil, lemon juice, the rest of the minced garlic, thyme, salt, and pepper. Brush this mixture over the salmon fillets.
Step 3: Bake the Salmon and Asparagus
- Arrange on Baking Sheet: Place the salmon fillets on the same baking sheet as the asparagus, skin-side down.
- Bake: Bake in the preheated oven for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.
Step 4: Serve
- Garnish: Remove from the oven and let it rest for a few minutes. Serve the salmon and asparagus with lemon wedges on the side for an extra burst of flavor.
