- 8 slices of bacon
- 8 large eggs
- Salt and pepper (to taste)
- Optional toppings: shredded cheese, chopped green onions, diced bell peppers, or spinach
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C).
Step 2: Prepare the Muffin Tin
- Lightly grease a standard muffin tin with cooking spray or oil to prevent sticking.
Step 3: Cook the Bacon
- In a skillet over medium heat, cook the bacon until partially cooked but still pliable (about 5-7 minutes).
- Remove the bacon and place on paper towels to drain excess fat.
Step 4: Form the Cups
- Take one slice of bacon and place it around the inside of each muffin cup, forming a circle. Use one slice per cup or overlap two slices for a thicker base.
Step 5: Add Eggs
- Carefully crack an egg into each bacon-lined muffin cup. Season with salt and pepper if desired.
- Sprinkle any optional toppings on top of the eggs.
Step 6: Bake
- Place the muffin tin in the oven and bake for 15-20 minutes, or until eggs are set to your liking. For runny yolks, check at around 12-15 minutes.
Step 7: Cool and Serve
- Remove the muffin tin from the oven and let cool for a few minutes.
- Run a knife around the edges to help release the cups, then gently lift them out.
- Serve warm and enjoy your Bacon & Egg Cups.
