Instructions
Toast the Bread
- Toast the whole grain bread slices until golden brown and crispy.
Prepare the Avocado
- In a small bowl, mash the ripe avocado with a fork.
- Add lemon juice, salt, and pepper, and mix until combined.
Cook the Eggs (Choose One Method)
Poached Eggs
- Bring water to a gentle simmer.
- Crack the eggs into a small bowl and gently slide them into the water.
- Cook for about 3–4 minutes until the whites are set.
Fried Eggs
- Heat a non-stick skillet over medium heat and add a little oil.
- Cook the eggs for about 2–3 minutes on each side.
Scrambled Eggs
- Whisk the eggs in a bowl.
- Pour into a heated skillet and cook, stirring gently, until just set.
Assemble the Toast
- Spread the mashed avocado evenly over the toasted bread slices.
- Place the cooked eggs on top of the avocado toast.
Garnish and Serve
- Sprinkle with red pepper flakes and fresh herbs if desired.
- Serve immediately.
