Avocado Egg Toast (Whole Grain) Recipe

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 large eggs (poached, fried, or scrambled)
  • Salt and pepper (to taste)
  • 1 tablespoon lemon juice (freshly squeezed)
  • Red pepper flakes (optional)
  • Fresh herbs such as cilantro or parsley (optional)

 


Instructions

Toast the Bread

  1. Toast the whole grain bread slices until golden brown and crispy.

Prepare the Avocado

  1. In a small bowl, mash the ripe avocado with a fork.
  2. Add lemon juice, salt, and pepper, and mix until combined.

Cook the Eggs (Choose One Method)

Poached Eggs

  1. Bring water to a gentle simmer.
  2. Crack the eggs into a small bowl and gently slide them into the water.
  3. Cook for about 3–4 minutes until the whites are set.

Fried Eggs

  1. Heat a non-stick skillet over medium heat and add a little oil.
  2. Cook the eggs for about 2–3 minutes on each side.

Scrambled Eggs

  1. Whisk the eggs in a bowl.
  2. Pour into a heated skillet and cook, stirring gently, until just set.

Assemble the Toast

  1. Spread the mashed avocado evenly over the toasted bread slices.
  2. Place the cooked eggs on top of the avocado toast.

Garnish and Serve

  1. Sprinkle with red pepper flakes and fresh herbs if desired.
  2. Serve immediately.
