Avocado Bacon and Egg Toasts Recipe

  • 2 ripe avocados
  • 4 slices of bacon
  • 4 large eggs
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for garnish)
  • Fresh herbs (such as chives or parsley, optional, for garnish)
  • Lemon juice (optional, for flavor)

 


Instructions

Step 1: Cook the Bacon

  1. Cook Bacon: In a skillet over medium heat, cook the bacon slices until crispy. This usually takes about 5-7 minutes. Once cooked, remove the bacon from the skillet and place it on paper towels to drain excess grease.

Step 2: Prepare the Avocado

  1. Mash Avocado: While the bacon is cooking, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, adding a pinch of salt, pepper, and a squeeze of lemon juice if desired.

Step 3: Toast the Bread

  1. Toast Bread: Toast the slices of bread until golden brown and crispy, either in a toaster or on a skillet.

Step 4: Cook the Eggs

  1. Fry Eggs: In the same skillet used for the bacon, crack the eggs and cook them to your desired doneness (sunny-side-up, over-easy, or scrambled). Season with salt and pepper.

Step 5: Assemble the Toasts

  1. Spread Avocado: Spread a generous amount of the mashed avocado on each slice of toasted bread.
  2. Add Bacon: Place one or two slices of crispy bacon on top of the avocado.
  3. Top with Egg: Carefully place a cooked egg on top of the bacon.

Step 6: Garnish and Serve

  1. Garnish: Sprinkle with red pepper flakes and fresh herbs if desired.
