  • 1 lb (450g) prawns (peeled and deveined)
  • 2 ripe avocados (diced)
  • 1 ripe mango (diced)
  • 4 cups mixed salad greens (such as spinach, arugula, or lettuce)
  • 1/2 red onion (thinly sliced)
  • 1/2 cucumber (sliced)
  • 1/4 cup fresh cilantro or parsley (chopped, for garnish)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 teaspoon honey (or agave syrup)
  • 1 clove garlic (minced)
  • Salt and pepper (to taste)

 


Instructions

Step 1: Cook the Prawns

  1. Heat a Skillet: In a large skillet, heat a tablespoon of olive oil over medium-high heat.
  2. Cook Prawns: Add the prawns to the skillet and season with salt and pepper. Cook for about 2–3 minutes on each side, or until they are pink and opaque. Remove from heat and set aside to cool slightly.

Step 2: Prepare the Dressing

  1. Mix Dressing Ingredients: In a small bowl, whisk together the olive oil, lime juice, honey, minced garlic, salt, and pepper until well combined.

Step 3: Assemble the Salad

  1. Combine Salad Ingredients: In a large bowl, combine the mixed salad greens, diced avocados, diced mango, sliced red onion, and cucumber.
  2. Add Prawns: Gently add the cooked prawns to the salad mixture.
  3. Drizzle with Dressing: Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are coated.

Step 4: Serve

  1. Garnish: Transfer the salad to a serving platter or individual bowls. Garnish with fresh cilantro or parsley.
