Alice Springs Chicken Recipe

Ingredients

• 4 boneless, skinless chicken breasts
• 1/2 cup honey mustard dressing (store-bought or homemade)
• 8 slices of bacon
• 1 cup shredded Monterey Jack cheese
• 1 cup shredded cheddar cheese
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• Salt and pepper, to taste
• Fresh parsley, chopped (for garnish)


Instructions

Step 1: Marinate the Chicken
• Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness (about 1/2 inch thick).
• In a large bowl, combine the honey mustard dressing, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts and coat them well. Let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

Step 2: Cook the Bacon
• In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and place on paper towels to drain excess grease. Once cooled, chop the bacon into small pieces.

Step 3: Cook the Chicken
• Preheat your oven to 350°F (175°C).
• In the same skillet used for the bacon, add a little oil if necessary and heat over medium-high heat. Add the marinated chicken breasts and sear for about 4-5 minutes on each side until golden brown.
• Place the seared chicken breasts in a greased baking dish.

Step 4: Assemble and Bake
• Top each chicken breast with chopped bacon, shredded Monterey Jack cheese, and cheddar cheese.
• Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C) and the cheese is melted and bubbly.

Step 5: Serve
• Remove from the oven and let rest for a few minutes. Garnish with chopped parsley before serving.
• Serve with your favorite sides, such as mashed potatoes, steamed vegetables, or a fresh salad.
