Air Fryer Rack of Lamb Recipe

  • 1 rack of lamb (about 1.5 to 2 pounds, frenched)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper (to taste)
  • 1 teaspoon Dijon mustard (optional, for added flavor)

 


Instructions

Step 1: Prepare the Lamb

  1. Preheat your air fryer to 400°F (200°C).
  2. In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, and Dijon mustard (if using).
  3. Rub this mixture all over the rack of lamb, ensuring it is well coated.

Step 2: Cook the Lamb

  1. Place the seasoned rack of lamb in the air fryer basket, bone side down.
  2. Cook for 15 minutes at 400°F (200°C).
  3. After 15 minutes, check the internal temperature using a meat thermometer. For medium-rare, aim for an internal temperature of 130°F (54°C).
  4. If needed, continue cooking for an additional 5–10 minutes until the desired doneness is reached.

Step 3: Rest the Lamb

  1. Remove the rack of lamb from the air fryer and let it rest for about 5–10 minutes to allow the juices to redistribute.

Step 4: Serve

  1. Slice the rack of lamb between the bones into individual chops and serve with your favorite sides.
