- 1 rack of lamb (about 1.5 to 2 pounds, frenched)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- Salt and pepper (to taste)
- 1 teaspoon Dijon mustard (optional, for added flavor)
Instructions
Step 1: Prepare the Lamb
- Preheat your air fryer to 400°F (200°C).
- In a small bowl, mix the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, and Dijon mustard (if using).
- Rub this mixture all over the rack of lamb, ensuring it is well coated.
Step 2: Cook the Lamb
- Place the seasoned rack of lamb in the air fryer basket, bone side down.
- Cook for 15 minutes at 400°F (200°C).
- After 15 minutes, check the internal temperature using a meat thermometer. For medium-rare, aim for an internal temperature of 130°F (54°C).
- If needed, continue cooking for an additional 5–10 minutes until the desired doneness is reached.
Step 3: Rest the Lamb
- Remove the rack of lamb from the air fryer and let it rest for about 5–10 minutes to allow the juices to redistribute.
Step 4: Serve
- Slice the rack of lamb between the bones into individual chops and serve with your favorite sides.
